V EDITION OF THE MEDITERRANEAN COOKING CONGRESS


May 29th in Corbara with “Il Corbarino, dall’Orto al Cielo” with the Corbara Excellent association

On May 29th in Corbara, nearby Salerno, the 5th edition of the Mediterranean Cooking Congress is scheduled. This festival is conceived by the team of By Tourist Srl and for the Corbara appointment will make use of the organizational machine of the “Corbara Excellent” association chaired by the entrepreneur Carlo D’Amato of the I Sapori di Corbara company. The event that for five years has been traveling along the coasts of the Mediterranean alternating a year on the Italian coasts with a year on other Mediterranean ports (2015 in Croatia and 2017 in Spain), aims at promoting internationally the flavors of the Mediterranean through congress moments, workshops, cooking shows, labs, b2b and press tours. The spotlight is turned on the raw materials that characterize the Mediterranean Nations’ diet, starting from the ground, analyzing the manipulation and transformation of these raw materials, the sale, distribution and methods of consumption on the international market.
“The Mediterranean Cooking Congress is a meeting place – explains Luisa Del Sorbo, manager of the By Tourist and creator of the event – each event aims at deepening the knowledge of a raw material that is part of our daily diet, starting from cultivation techniques, analyzing the transformation and intercepting the methodologies of distribution and consumption to encourage the sale of genuine products and help consumers to acquire the right tools to identify, despite the media and advertising bombardment that invades our lives, which products are really genuine and how to identify them and track them down on the global market of the current era”.
So, after the Focus of recent months, organized in Italy, on oil and wheat, we continue the journey with the congress appointment at the Municipality of Corbara, in the province of Salerno, with the convention “Il Corbarino, dall’Orto al Cielo”, scheduled for May 29th at the glass building, which will make use of the organization Corbara Excellent in partnership with various associations and companies in the area and the patronage of the Municipality of Corbara.
“The event will start at 9.30 with the meeting with farmers – explains Carlo D’Amato president of the Association Corbara Excellent and manager of the company I Sapori di Corbara – illustrating the production techniques of corbarino. We will continue with the award ceremony of farmers and 5 cooking shows in which 5 emerging Italian chefs will present as many dishes to enhance the organoleptic characteristics of Corbarino, told with interviews with chefs by renowned journalists in the gastronomic sector and scientifically supported by 5 professors and university researchers, experts in the agri-food sector “.
Followed by a tasting of corbarino with pasta makers, bakers and pastry chefs of the Campania area. In the afternoon, the square in front of the glass building of the City of Corbara will host the Corbarino party with Italian pizza makers to let the Gourmet Pizza Corbarì taste and the Corbara restaurateurs in front line to let people taste their specialties. The door is open to the expert public and operators of the sector, to the tastes of this wonderful territory, on the border between the agro nocerino sarnese and the Amalfi coast.
“Corbara is the heart of an extraordinary micro-climate, – illustrates Pietro Pentangelo, mayor of Corbara – a bridge between the ancient fertility of the Chieti nocerino area and the scenery and the sun of the Amalfi coast.
In this context, the Corbarese farmers, through costumes and skilled production techniques, give birth to and grow the “corbara rubies” the Corbarini.
With great pride, we struggle every day to ensure that this production is safeguarded and widespread as the true excellence of our territory to which an entire community feels bound.”
For the occasion artisans, companies and associations of the territory, hotel institutes, cooking schools, sector media, chef associations, Neapolitan Gourmet pizza association, association pizzaioli di Tramonti, sommeliers, research and training institutes, barmen have been involved and all those who work in a direct and indirect way every day, in a healthy way, to inform and contribute to the use of genuine flavors.

May 29th program:

– 9.30 am introduction by the journalist Giuseppe Iannicelli of Canale 21 with the awarding of 4 farmers from Corbara, historical families of the territory, organized by the company I Sapori di Corbara. Pietro Pentangelo, Mayor of Corbara, will be handing out the rewards.

– 10.30 am Cooking Show coordinated by the journalist Vincenzo D’Antonio from Italia a Tavola. Each chef will be paired with a gastronomy journalist and an expert from the world of research. 30 minutes are given to prepare a single dish that enhances the organoleptic characteristics of Corbarino. The journalist will exalt its look and culinary combinations, the expert of the research world the organoleptic and healthy characteristics of the ingredients chosen for the recipe. These are the protagonist teams:

1. Chef Paolo Barrale of the starred restaurant Marenna’ and President of the Chic Association, supported by the journalist Giuseppe Giorgio of Il Roma and the Mrs. Annalisa Romano of the Faculty of Agriculture of the Federico II University of Naples;
2. Chef Vincenzo Del Sorbo of Pompeo Magno restaurant in Pompeii, supported by journalist Antonella Petitti of La Città and Mrs. Daniela Barone of the Napoli Cancer Center G. Pascale Foundation;
3. Chef Domenico Iavarone of the Jose’ Restaurant in Torre del Greco, supported by the journalist Santa di Salvo of Il Mattino and Rocco De Prisco, researcher of the CNR (National Research Council);
4. Chef Giulio Coppola of the restaurant La Galleria di Gragnano, supported by the journalist Michele Armano of the Restaurants Guide of Gambero Rosso and the professor Michele Scognamiglio of the University Faculty of Campania Vanvitelli;
5. Chef Erminia Cuomo and Pietro Cuomo of Il Bacco di Furore restaurant, supported by the journalist Mario Amodio of Amalfi Notizie and Professor Teodoro Cardi, director of Crea (Council for Research in Agriculture and Analysis of the Agrarian Economy).
Following, a tasting of the Taste Plans at the glass building with the second floor dedicated to savory products of the companies of the Municipality of Corbara and the third floor dedicated to the sweets of Anna Chiavazzo, Sal De Riso, Gaetano Nasta and Alfonso Pepe.
In the early afternoon, the journalists will be able to visit the “Borgo Giulia” winery in Corbara.

– At 6 pm the spaces in front of the glass building will be animated by the pizza-makers of the “Pizza Napoletana Gourmet” and “Pizzaioli di Tramonti” associations to celebrate the “Pizza Corbari”. The festival will be open to the public and for the occasion the restaurateurs of Corbara will let you taste the specialty of the territory, from fresh pasta to agro-food and cheese specialties.
